Back to school for grown-ups dessert

I went back to school for the first time since 2006 this week! I’ve taken a variety of courses, including a continuing ed certificate since then…but this is the first time I’ve been a full time student in a long time! It’s been a busy week so far. When I get home, it’s nice to have this kind of after school snack ready, and waiting for me in the freezer.

Peanut butter and jelly might not be allowed in the average bagged lunch these days, but that classic flavor pairings is still great. Here’s a grown up healthy twist on it:

Peanut butter and jelly “cheesecakes”!

These are very quick to make. You just blend everything in the food processor, and then fill individual tart shells with the mixture, and you will have happy single servings ready to go.

Ingredients:

  • 1/3 cup pitted dates
  • 1/2 cup unsalted peanuts
  • 1/2 cup blueberries
  • 1 cup greek yogurt
  • 1 tbsp vanilla
  • pinch salt
  • 9 tablespoons peanut butter
  • peanuts for topping
  1. Pulse dates and peanuts in food processor until well blended (small pieces). Then, add everything except the peanut butter in the food processor until smooth and evenly mixed.
  2. Fill small tart shells with mixture (you may want to line with parchment or plastic wrap for easy removal).
  3. Add the peanut butter element of surprise. (Good desserts have an element of surprise. Just like good movies).
    Add 1 tbsp of peanut butter into the center of each cake. Press it down so it sinks most of the way.
  4. Press a peanut into the peanut butter
  5. Freezer for at least 2 hours.

Ready to serve ’em up?

Place on the counter for 20-30 minutes…eat them frozen (they’re good frozen)…or zap them in the microwave for about 10 seconds (or longer, depending on your microwave strength). Just don’t microwave anything before you take it out of the metal!

  • they are really just a super healthy snack disguised as a dessert
